I really don't like vegetables, but I know I need to eat them. How do I make them taste good?
The only vegetables I currently like are canned wax beans and peas... most of the time vegetables are just too plain for me, I like flavor. What should I do?
PEas is a good start. If you sautee some red onion, and cook til it goes soft, translucent and buttery, then add some peas and a little curry powder, it tastes lovely. You can add diced small potatoes too, and cook til they are soft, about ten minutes ( use a little bit of broth in the pan too while they cook).
Saute some butter, diced onion or garlic, and add some chopped leeks. Cook til they are soft and going melty- might take 10 minutes. Then add small diced potatoes and cook about ten minutes more. At the end , add some of oyur wax beans, and some other beans- like a few chickpeas, salt, pepper, and some walnuts. the leeks, beans, walnuts and potatoes go so well together.
If you like the beans, I would try other equally tasty ones: fava beans, lima beans, canellini beans.
Empty, and drain and rinse. Then put in a shallow pan with olive oil, some garlic cloves, lemon jiuce, and gently heat through til th e garlic is soft, then mash it with a spoon. Add some fresh chopped herbs- parsley is good, and pour the beans onto a plate. Add on top some asparagus stems you've boiled gently- take four minutes, and they are not boring.
If you use the flavours and texture you like, and add one or two things each day, you'll find at least a few other veg you like.
Adding peanut sauce to veg is always a good way to make them interesting- buy peanut sauce from a Thai or Korean store, or mix peanut butter, soysauce, and some red chili ( a little only), to make an Indonesian style kecap ( ketchup). Then cook some brussel sprouts- I don't know why peanut sauce goes so well with brussel sprouts, it just does. If you don't like brussels, try broccoli or even green beans. Cook the veg, then drap some peanut sauce on them. It's good.
You need to add garlic, lemon juice, ketchup, soysauce, tamaro sauce, salt, pepper etc, whatever it takes. there's an amazing recipe I know with brussel sprouts, you really do have to try to believe it.
Halve some sprouts, and cook for a few minutes.
Then add oil to dish pan or butter, and heat in the oven. Add the halved brussel sprouts and a glaze of balsamic vinegar and honey/brown sugar, in a drizzle, Then cook ten minutes on high heat, tl they're glazed. You can also do the oven method in a fry pan- just heat and cook them in a pan , cover and leave til they go glazed and caramelized.
